2023 Dornfelder dry

Ingredients

• 400 gRigatoni
• 300 gSalsiccia with fennel
• 1 pieceOnion
• 2 piecesGarlic cloves
• 400 gCrushed tomatoes
• 2 tbspOlive oil
• 0,5 tspChili flakes
• 100 mlDry red wine
• 1 bunchFresh basil
• 50 gPecorino
• 1 tspSalt
• 0,5 tspPepper

Preparation

1. 1Finely dice the onion and garlic, and carefully remove the casing from the Salsiccia.
2. 2Pull the sausage meat into bite-sized pieces and brown thoroughly in a large pan with olive oil.
3. 3Add the diced onion and garlic to the meat, sauté briefly, and season with chili flakes.
4. 4Deglaze with red wine and let it reduce almost completely before adding the tomatoes.
5. 5Simmer the sauce over medium heat for about 15 to 20 minutes to allow the flavors to meld.
6. 6Meanwhile, cook the pasta in a large pot of salted water according to package instructions until al dente.
7. 7Toss the cooked pasta into the sauce, adding a splash of pasta water if needed.
8. 8Season to taste with salt and pepper, garnish with fresh basil, and serve with grated Pecorino.
