2024 Secco dry

Ingredients

• 200 gGoat cheese log
• 100 gArugula
• 1 piecePeach
• 2 tbspWhite balsamic vinegar
• 1 tspHoney
• 3 tbspOlive oil
• 1 tspDijon mustard
• 20 gPine nuts
• 1 pinchSea salt
• 1 pinchBlack pepper

Preparation

1. 1Thoroughly wash the arugula, spin dry, and spread evenly onto plates as a bed.
2. 2Halve the peach, remove the pit, and dice the fruit into very fine cubes.
3. 3For the dressing, whisk together the white balsamic vinegar with honey, mustard, salt, and pepper until dissolved.
4. 4Slowly whisk in the olive oil and finally fold in the diced peaches.
5. 5Toast the pine nuts in a non-stick pan without oil over medium heat until golden brown, then set aside.
6. 6Cut the goat cheese log into slices about 1.5 cm thick and sear briefly in a hot pan on both sides until lightly browned.
7. 7Place the warm goat cheese rounds onto the arugula and garnish generously with the peach vinaigrette and the pine nuts.
