2024 Riesling feinherb

Ingredients

• 300 gsalmon fillet (sushi grade)
• 1 pieceripe avocado
• 1 pieceshallot
• 0,5 bunchchives
• 1 pieceorganic lime
• 2 tbspolive oil
• 1 tsphoney
• 1 pinchsea salt
• 1 pinchblack pepper

Preparation

1. 1Rinse the salmon fillet under cold water, pat dry, and cut into fine cubes approximately 0.5 cm in size.
2. 2Peel the shallot and dice it extremely finely. Wash the chives and cut into fine rings.
3. 3Halve the avocado, remove the pit, carefully scoop the flesh out of the skin, and dice it finely as well.
4. 4Wash the organic lime with hot water, finely grate the zest, and then juice the lime.
5. 5Immediately toss the avocado cubes with one tablespoon of lime juice to prevent browning.
6. 6For the vinaigrette, whisk together the remaining lime juice with the lime zest, olive oil, and honey. Season to taste with salt and pepper.
7. 7In a bowl, mix the diced salmon with the shallots and chives, then stir in two-thirds of the vinaigrette.
8. 8Using a serving ring, layer the avocado first, then the salmon tartare onto plates. Carefully remove the ring and drizzle with the remaining vinaigrette.
