2025 White Wine Cuvée sweet

Ingredients

• 250 gFlour
• 125 gCold butter
• 1 pcEgg
• 0,5 tspSalt
• 200 gGoat cheese log
• 100 gCrème fraîche
• 4 tbspLiquid honey
• 4 sprigsFresh thyme
• 1 pinchBlack pepper
• 40 gWalnut kernels

Preparation

1. 1Quickly knead the flour, small pieces of cold butter, the egg, and salt into a smooth shortcrust pastry and let it rest in the refrigerator for about 30 minutes.
2. 2Preheat the oven to 180°C (356°F) using conventional top/bottom heat and lightly grease the tartelette molds.
3. 3Roll out the chilled dough thinly on a floured surface and cut out circles to fit the molds.
4. 4Line the molds with the dough, press down the edges, and prick the bottom several times with a fork.
5. 5Mix the crème fraîche with a little pepper and spread evenly over the dough bases.
6. 6Cut the goat cheese log into approximately 1 cm thick slices and place one slice in the center of each tartelette.
7. 7Sprinkle the chopped walnuts and thyme leaves over the cheese and drizzle everything generously with honey.
8. 8Bake the tartelettes in the preheated oven for about 20 minutes until golden brown and serve warm.
