2025 Riesling Kabinett fruit-sweet

Ingredients

• 200 gall-purpose flour
• 100 gcold butter, cubed
• 1 pieceegg (size M)
• 0,5 tspsalt
• 300 gfresh goat cheese
• 150 ggoat cheese log
• 4 tbspacacia honey
• 4 sprigsfresh thyme
• 100 gcrème fraîche
• 0,3 tspblack pepper

Preparation

1. 1Quickly knead the flour, cold butter, egg, and salt into a smooth shortcrust pastry, wrap in plastic wrap, and let rest in the refrigerator for 30 minutes.
2. 2Preheat the oven to 180°C (350°F) using top/bottom heat and grease four tartlet molds thoroughly.
3. 3Roll out the chilled dough on a floured surface to a thickness of about 3 mm, cut out matching circles, and line the molds with them.
4. 4Prick the dough bases several times with a fork, cover with parchment paper and ceramic baking beans, and blind bake for approx. 12 minutes.
5. 5Meanwhile, stir the fresh goat cheese with crème fraîche, two tablespoons of honey, and half of the finely chopped thyme leaves into a creamy mixture.
6. 6Remove the baking beans, spread the cheese mixture evenly into the bases, and place a slice of the goat cheese log in the center of each.
7. 7Bake the tartlets for another 15 minutes until the cheese begins to melt slightly and the edges of the pastry are golden brown.
8. 8Before serving, drizzle with the remaining honey, garnish with fresh thyme, and season with a pinch of pepper.
