White Grape Juice

Ingredients

• 1000 gApples (e.g., Boskoop)
• 250 gStrudel dough
• 2 tbspLemon juice
• 100 gSugar
• 1 tspCinnamon
• 50 gRaisins
• 50 gSlivered almonds
• 120 gButter
• 60 gBreadcrumbs
• 500 mlMilk
• 3 piecesEgg yolks
• 1 pieceVanilla bean
• 1 tbspCornstarch

Preparation

1. 1Peel, core, and thinly slice the apples, then toss with the lemon juice, cinnamon, raisins, almonds, and half of the sugar.
2. 2Preheat the oven to 180°C (350°F) top/bottom heat and line a baking sheet with parchment paper.
3. 3Toast the breadcrumbs in about 20g of butter in a pan until golden brown.
4. 4Spread the strudel dough out on a floured cloth, brush with melted butter, and distribute the toasted breadcrumbs over it.
5. 5Place the apple filling on the bottom third of the dough, fold in the sides, and carefully roll up the strudel using the cloth.
6. 6Place the strudel on the baking sheet with the seam facing down, brush with the remaining butter, and bake for about 35 to 40 minutes until golden brown.
7. 7For the sauce, bring the milk to a brief boil in a pot with the vanilla bean seeds and the remaining sugar.
8. 8Whisk the egg yolks until smooth with the cornstarch, pour the hot milk in while stirring constantly, and thicken the mixture over low heat.
9. 9Cut the warm strudel into slices and serve on plates with the creamy vanilla sauce.
