2023 Riesling Winzersekt brut

Ingredients

• 12 piecesOysters (e.g., Fines de Claire)
• 3 piecesEgg yolks
• 100 mlDry sparkling wine (Sekt)
• 1 tbspLemon juice
• 0,5 tspLemon zest
• 1 pinchSalt
• 1 pinchCayenne pepper
• 500 gCoarse sea salt (for serving)

Preparation

1. 1Preheat the oven broiler to its highest setting.
2. 2Carefully open the oysters with an oyster knife, detach the meat from the shell, drain the natural liquor, and place the meat back into the deep half of the shell.
3. 3Fill a baking sheet or heat-proof dish with a thick layer of coarse sea salt and nestle the oyster shells firmly into it so they remain stable.
4. 4For the zabaione, whisk the egg yolks together with the sparkling wine and lemon juice in a metal bowl over a hot (not boiling) water bath until a stable, creamy consistency is achieved.
5. 5Gently fold the lemon zest, a pinch of salt, and cayenne pepper into the foam mixture.
6. 6Generously cover each oyster with the lemon zabaione so that the meat is completely coated.
7. 7Place the tray on the top rack of the oven and broil the oysters for about 60 to 90 seconds until golden brown and the surface begins to color slightly.
8. 8Serve the hot oysters immediately on the bed of salt.
