2025 Zero Wine #Piwilicious

Ingredients

• 150 gGorgonzola Dolce
• 100 gMascarpone
• 100 mlHeavy cream
• 2 piecesRipe pears
• 20 gButter
• 2 tbspBrown sugar
• 1 tbspLemon juice
• 30 gWalnut kernels
• 1 sprigFresh thyme

Preparation

1. 1Mash the Gorgonzola with a fork and stir together with the mascarpone until a smooth cream forms.
2. 2Whip the heavy cream until stiff and gently fold it into the cheese mixture, then refrigerate for at least 20 minutes.
3. 3Wash the pears, remove the cores, and cut into uniform wedges.
4. 4Melt the butter in a pan, add the sugar, and let it caramelize slightly.
5. 5Drizzle the pear wedges with lemon juice, add to the pan, and sauté for about 2-3 minutes on both sides until golden brown.
6. 6Roughly chop the walnut kernels and toast briefly in a dry pan.
7. 7Arrange two to three pear wedges on each plate, place a quenelle of the Gorgonzola mousse on top, and garnish with walnuts and thyme.
